Have you ever been to PF Chang’s? Yes, that’s how I’m starting my post talking about a chain. No just talking about the food and giving them credit for the inspiration. Mom and I would meet there for lunch because it’s halfway between her house and mine. One of the items we ordered was lettuce wraps with chicken. They were fun, light, tasty and not too filling. How is it possible that I never made them before? I assume there was some special secret amazing sauce that I couldn’t replicate.
So I went to my friend – Google – and found a bunch of recipes. Many were PF Chang’s knockoffs. Fortunately the ingredients were very similar. We had butter/bibb lettuce, at the house, so why not give it a try. We had most of the ingredients. Mom bought ground chicken, hoisin and ginger.
The first step was cutting and preparing the vegetables, and herbs. Not too hard. Second step was making the sauce. This sauce is what gives the chicken filling its rich, savory depth. There are many versions, favorites, homemade nuances. The sauce I used was simple with hoisin sauce, rice vinegar, and soy sauce. Some people use peanut butter, honey, sriracha, and/or sweet chili sauce.
Would I make it again? Yes, definitely. The dish was quick, easy, fun healthy, and delicious. Mom enjoyed it, and might even make it herself. Once you get the basics down, there are lots of ways to change it up to make it your own. Add more veggies (mushrooms, peppers), mixup the toppings (scallions, peanuts, bean sprouts, noodles, pickled daikon radish).




Yum, and easily done with beyond meat too. 🙂
